That looks pretty good. I did masonry for a few years and I always loved stick on stone jobs. They are fairly easy and look fantastic when finished. Just make sure not to stack the joints (which I'm sure you already know) and enjoy! Keep us posted on your progress. If you lived closer, I would love to come help. Jobs like those are so much fun. (mainly because I'm not carrying 12 inch block around, just boxes of stick on stone lol)
I agree, the bigger pieces can make it easier just because you eat up more space with each piece, but I feel the smaller pieces make it look "older" and in my mind better. Time consuming, but better. What are you using to cut the pieces? I used a table saw with a diamond blade made for stone. It also had built in guide that ran on rollers so you could just lay the piece down and slide right through it.
That looks good man! I can't wait to see it finished. That's not a bad deal for the crates either. The crates, depending on brand/color/type/etc are usually around $150-200 a box.
